Madelyn Walking on her Own!
Maddie is growing so fast, I just can't believe it! She loves to stand, cruise around the furniture, and even walk - as long as she has your hand for security. Lately she hasn't needed my hand but still holds on to it (though I don't mind!) Yesterday, however, I let go of her hand to grab something and she took off. I was amazed--I think she was too, because after crossing the room and realizing I wasn't there, she dropped to the floor! I started standing her up and getting her to walk to me. She got a little more shy when the camera was out and Ma and Daddy were there, but still did good! I'm so proud of my little bug!

Making Some Magic Brownies
Abby came over to hang out with me and Maddie today. We've had fun watching movies and playing with toys! When Maddie took her afternoon nap, Abby and I decided that it was time to make some brownies! Enjoy the pictures!

Zucchini Bread is Mmm Mmmm Good!
I finally dug my zucchini and cucumber plants out of the weeds (well mostly, its still a work in progress). I decided with some of my fresh produce, I'd make some delicious treats! First on my list was a new zucchini bread recipe. I was excited to try it. The recipe is below. A friend offered me her zucchini pie recipe. It looks great! That's next on my list to try!!!!
I hope you enjoy the recipe! I'm sure you'll see from the pictures that my little bug sure enjoyed it!
3 Cups Flour
1 Teas Salt
1 Teas Baking Soda
3 Teas Cinnamon
1/4 Teas Baking Powder
3 eggs
2 Cups White Sugar
3 Teas Vanilla
1 Cup Vegetable Oil
3 Cups Grated Zucchini
1 Cup walnuts (optional)
1) Preheat oven to 350
2) Sift together dry ingredients
3) Beat eggs, add sugar, vanilla, and oil and mix well. Add zucchini. Add dry ingredients.
4) Pour into 2 ungreased loaf pans
5) Bake for 1 hour

My Corny Family!
Every year our family gets together to freeze our favorite veggie to eat year round! This year our sweet corn came a little earlier than usual. Though not all of it was ready, we decided to get a head start on our usually all day event of freezing corn. Its always a good time! (Plus leaves us with plenty of corn for the whole year- and then some!) Enjoy the pictures!

These are a few of my favorite things......
Monday I had the day off from work in honor of July 4th. It was so nice to be able to get a few things done! But what was even better than weeding around my deck and washing my living room carpet, was Marc calling to say he was heading home early from work and that we were going to eat lunch at Rancho Bravos! For those of you who don't know, Rancho Bravos is my absolute favorite restaurant. I could eat there everyday! You get so much delicious food for so cheap! Its wonderful!
I really enjoyed spending an afternoon with my husband and my wonderful little girl! (Who also loves Rancho Bravos! She always eats her cheese quesadilla, rice, and some meat and cheese from Mommy's taco. She also likes the cheese enchilada and the guacamole - though she only gets a few bits of those things since they can sometimes be spicy.)

Pickled Peppers....Watch Out Peter Piper!
This weekend I went to our garden to take inventory (I'm super excited for my cherry tomatoes to come on). This year our peppers have done really well. We had a ton on our few pepper plants that are planted. I decided that I would try canning them.
I searched and searched for a recipe that I liked. A lot of them had garlic and onions with them. But I wanted something a little sweet and tangier than that. I ended up just using one part vinegar, 1/2 part sugar, 1/2 part water. (The recipe I found said 1 part sugar, but several reviews said that was too sweet.)
We chopped (I enlisted Marc to help! Thanks Marc!) and chopped. It seemed like we had a million peppers! Its funny because when we were done I was thinking, only 6 pints worth? But hey, that's a good start considering we'd never done this before!

My next pepper goal is to fry them like zucchini. I also might try making "poppers". Though they're not spicy, like their brother the jalapeno, cream cheese inside of any food is good to me!
Besides peppers, I plan on putting up pickles again this year. I hope my cucumber plants are fruitful. If not, Kroger's might be getting more business from me! :)
My family also puts up sweet corn and applesauce. Its always fun to do together and tastes so good during those winter months when we'd forgotten what summer was like!
I also want to try apple butter this year. I've found several recipes online, but am open for some suggestions! Any of you ever made apple butter? What process do you use to can apple butter?

You scream, I scream, We all scream for Ice Cream!
Ma, Pa, and Aunt Casie met me and Maddie in town for lunch the other day. I needed to run to the doctors and they volunteered to take Maddie for me. (I really had to twist their arms!) On my way home from my appointment, I was sent a few pictures via text.......Ma and Pa couldn't resist getting their grand baby some ice cream!
